Barbers 1833 Vintage Cheddar
Made using traditional starter cultures by the Barber family on Ditcheat Farm in Somerset for the last six generations. It is matured for at least 24 months and made from rich milk from their own herd of cows. It is a creamy cheese with both savoury and sweet notes.
Godminster Vintage Organic Cheddar
Strong flavoured waxed cheddar made from pasteurised organic cow’s milk. One of the best.
The Keen family have been making unpasteurised cheddar since they moved to Moorhayes Farm in 1899. Five generations later, they are still here, and producing an award winning cheese.
Montgomery’s Farmhouse Mature Cheddar
Montgomery’s Mature Cheddar is the epitome of traditional, handmade, unpasteurised Somerset Cheddar. Mature for 12 months wrapped in muslin cloth, this cheese has deep, rich and nutty flavours.
Quicke’s Extra Mature Cheddar 16 Months Old
The Quicke family of Devon have been producing cheese for over 450 years. All their cheeses are matured on wooden shelves in muslin cloth, giving a real depth, and complexity of flavours.
Quicke’s Mature Cheddar 8 Months Old
A younger version of the 16 month cheddar. Matured in the same way, and still full of flavour!
Developed through watchful maturation, Red Fox is russet in colour, with a hint of ‘crunch’. A complex blend of sweet and savoury, with nutty flavours.
White Fox is rich, nutty, intensely creamy cheddar matured for 18 months. Possesses the same ‘crunch’ as its Red Fox counterpart.
Wookey Hole Cave Aged Cheddar
A previous winner of Supreme Champion at the International Cheese Awards. Matured in caves for a truly unique flavour.
Wookey Hole Cave Aged Goats Cheddar
A deliciously moist, tangy, nutty, cave aged goats cheddar. Made using traditional methods, from salting the curd to hand-wrapping the cheese.
