Filleta, also recognized as ‘A filetta’, stands as a traditional Corsican cheese produced from sheep’s milk, crafted by hand and left unpasteurized. Adorned with a fern sprig, this cheese hails from Isolaccio, situated 45 km to the south of Bastia.
The maturation period of Filleta lasts approximately 4-6 weeks, with an alternative version using goat’s milk accessible from January to late July. A filetta promises a pleasurable encounter with its tender, flexible consistency, paired with a slightly crispy, salty outer layer. Its taste profile is characterized as earthy, herbal, and mushroom-like, with a subtle essence of fern. This cheese boasts a fat content of 45%.
