Previously made but now part of the Village Maid Family, Barkham Blue is indeed a cheese with a unique appearance. The round shape, resembling an ammonite, is covered in a natural mould-ripened rustic rind. Inside, the moist yellow interior is adorned with dark blue-green veins. Its flavour is rich and blue, with a smooth buttery texture that melts in the mouth, all without the harshness often found in other blue cheeses. Pairing Barkham Blue with sweet dessert wines like Tokaji from Hungary or Sauternes from France is highly recommended for a delightful culinary experience.
