Esquirrou or Ossau-Iraty is a cheese with a hard texture made from pure ewe’s milk. It is produced in the department of Pyrénées-Atlantiques and in towns of the Hautes-Pyrénées. This cheese is native to the Basque Country and Béarn, deriving its name from the Pic du Midi d’Ossau and the Iraty forest. Known for its wide range of aromas. The caprine flavour offers a combination of buttery, fruity, herbaceous, and nutty notes, creating a unique and flavourful experience. In summer this cheeses tend to have an aromas of grass and flowers.
The cheese of Equirrou is deeply rooted in the pastoral and cheese-making traditions of the Basque Country and Béarn. Dating back to the Middle Ages, cheese was a valuable commodity used as a form of currency for paying leases or sales contracts, serving as the primary source of income for shepherds. Throughout the centuries, the production of this cheese has remained relatively unchanged, with each shepherd family crafting their own unique cheese and selling it.
