Pérail du Fédou Bergeronnette with sheep’s milk, is a true reflection of family’s heritage and tradition. Crafted with a sweet rennet curd, this cheese has been lovingly made since 1978 and is named after the lively bird that signals the arrival of spring on the Causse Méjean.
Each Bergeronnette cheese is meticulously moulded, salted, turned, and packaged by hand, resulting in a fine and creamy texture. Over time, the flavours of the cheese mature, maintaining a delicate sweetness without becoming overpowering. The unique taste and texture of the Bergeronnette cheese showcase the natural flora of our mountainous region, embodying a character that is both gentle and assertive.
Pérail is a cheese with a rich history, dating back over 2000 years when Pliny the Elder mentioned a flat, round cheese made from sheep’s milk in the Gabales region. Today, Pérail is in the process of obtaining the prestigious Appellation d’Origine Contrôlée (AOC) designation.
Originating from family farms across the causses and the Millau region, Pérail is a soft cheese with a bloomy rind, made from raw sheep’s milk using a gentle curdling process with rennet.
