Halloumi, a cheese traditionally crafted from goat’s and/or sheep’s milk on Cyprus in the Eastern Mediterranean, is akin to mozzarella, boasting a white, layered appearance. This semi-hard, unripened cheese is brined, offering a slightly spongy texture. Its taste is tangy and salty, devoid of any rind. While it can be consumed raw, Halloumi’s high melting point makes it perfect for grilling or frying. When consumed in its uncooked state, Halloumi is straightforward and somewhat resilient, with salty undertones. However, when crisped up in a pan or on the grill, it transforms into a delectably crispy and savory treat on the outside, while melting sensually on the inside, reminiscent of the texture of a toasted marshmallow. There are many recipes that use halloumi beyond simple grilling.
