Inspired by summers spent in Brittany, Lady Joseph discovered the exceptional qualities of Guérande sea salt and made it an essential ingredient in her recipes.
The flour used in these crackers is traditionally stone-ground, a method that preserves more nutrients and enhances the natural aroma and flavour of the grain compared to modern industrial milling.
To achieve their distinctive texture, the dough is allowed to rest for 12 hours before being slowly baked. This careful process helps preserve nutrients while creating an ultra-thin, perfectly crisp cracker that remains satisfyingly sturdy.
