Sheeps Animal Unpasteurised
In 1976, 40 farmers bought a cellar in Roquefort-sur-Soulzon to stay independent and control how their milk becomes cheese. Today, of the seven Roquefort producers, La Pastourelle is the only one run as a breeders’ cooperative. Nearly 140 small farms now ensure top-quality milk, support local development and sustainable agriculture, secure fair pay for farmers, and enable smooth generational handovers.
It is the very first cheese granted AOC in 1925; PDO designation since 1996.Made exclusively from daily-collected raw milk of Lacaune sheep, it is produced using a specific strain of Penicillium roqueforti, careful selection of loaves matured in natural cellars, and a slow ageing of more than six months (Grande Selection)
Made exclusively from Coopérative La Pastourelle milk, each wheel matures at least 3 months in a natural cellar using a specific Penicillium roqueforti strain. Exceptionally low in salt, it offers a creamy, melting texture with a clean, fresh flavour and a well-balanced blend of acidity, salt and classic blue-cheese notes.
