Located at Hartgrove Farm in Dorset, The Real Cure uses traditional curing, fermenting, air drying, and smoking techniques to produce exceptional British charcuterie. Committed to responsibly sourcing all ingredients, including wild deer and free-range pork, as well as supporting local suppliers whenever possible, such as using local Dorset cider and cheese. They are at the forefront of the British charcuterie movement. Their artisanal processes have been honed over years, resulting in consistently outstanding British charcuterie. Based on the user input, the 3 Month Dry Aged Hartgrove Coppa Ham is a 3 Star Great Taste Award winner. It is made from free range air dried pork, dry cured in a gentle mix of herbs and spices, and aged for a minimum of 3 months. This ham is a fantastic addition to a British charcuterie sharing board or antipasti selection. It can be enjoyed by wrapping around asparagus spears or pickles, or used in place of parma ham. The Great Taste Judges described the ham as very good looking with excellent marbling, a huge savoury aroma of bay leaf, pepper, and salt. The pork melts in the mouth, and the fat is rich and incredibly creamy. The balance of seasoning and pork is excellent, with hints of warm countries in the aroma that transport them right to lunch.
